Just $10 for Michelin-Starred Prawn Noodle Summore With Prawn Paste Ribs?

This is definitely not your not your average prawn noodles but this is a Michelin starred style prawn noodle!

Ok la, to be precise, it’s not really Michelin starred but it’s Michelin-starred chef that prepares the Prawn Noodle and you can enjoy it just for $10! Where to find so good deal?! This is a place opened by Chef Kang (Ang Song Kang) which is a Cantonese diner that won a Michelin Star in 2017 and retained that star in 2018 and 2019.

This place is called Chef Kang’s Prawn Noodle House and it’s now opened at Toa Payoh. This is not the first Noodle House where Chef Kang also owns a Chef Kang’s Noodle House at Jackson Square, Toa Payoh.

But good and bad news for you where at the Chef Kang’s Prawn Noodle House only has two main dishes on its menu. Bad thing is that you don’t have much selection but the good side of this is that you don’t need to have headache on what to choose.

The 2 dish available are:

  • The King Prawn Noodle Soup with Prawn Paste Spare Ribs (S$10) comes with a bowl of prawn noodle, one deep sea king prawn, fried pork lard, and crispy prawn paste spare ribs.
  • The other dish, the Hot Stone Prawn Paste Spare Ribs Rice (S$10) has rice, fried pork lard, raw egg yolk, dark soy sauce, and prawn paste prawn ribs.

Weeks after its opening, we returned to check out the taste could be better. And with Chef Kang in the kitchen today, we held our hopes high. We had the prawn noodles and the hot stone claypot rice as well. Served steaming hot, the rice was no lacking in the crispy burnt rice that we loved. Although there wasn’t other ingredient than egg, Chef Kang’s crispy pork lard added much flavour to the rice. Comparatively, the prawn paste pork chop took a backseat to the pork lard. The prawn soup tasted much more balanced and flavourful today, anchored by the man himself in the kitchen. We were glad that the prawn was also fresher. Good move to serve the pork chop on the mesh separated from the soup to keep it crispy. Previously, the noodles without the pork lard were pretty average; but its taste was certainly elevated with each bite of the fragrant and crispy pork lard cube. Overall, we still felt that these were a little on the pricy side. But as long as the standards are maintained, we will return for those tasty burnt rice, rich prawn soup and fragrant pork lard.

Tried this hyped up new joint with its crazy long queues and waiting times, and honestly, this may have its fans but don’t count me in. The broth is using chicken instead of pork, and while it may not have msg, it’s probably too light, so much so that it’s salted way too heavily that I still feel thirsty afterwards. They have only two items, the rice and the prawn noodles and this bowl has a standard price of $10. For that, you get one butterflied king prawn, a har geong spare rib instead of the usual pork ribs, and I suppose the rest of that price tag goes to his French tyre Pedigree. Needless to say, I don’t feel it’s worth it. But as always, I must point out some redeeming factors despite my aversion to this hyped up sg classic, the fried lard is nicely fried (in house I presume) and the king prawn is different from the usual crustacean, though it’s still smaller and less fresh than the ones I get at river south. The spare rib itself is decent though I won’t climb mountains just to have it, but it’s jarring to go with the soup as it doesn’t really make much sense when we are so used to pork ribs and pork based soups and their spare parts. The chicken base just isn’t enough and I Guess that’s why no famous prawn noodles ever use this as an alternative. There was also very skimpy use of Kang Kong and bean sprouts when u r paying this price. And though I understand he uses a customised yellow noodle, it doesn’t make any difference and tastes like any other if I am perfectly honest. Make a pilgrimage here once if u must, but I doubt I will return anytime soon 🙂

After waiting for more than an hour, this is Chef Kang – one Michelin’s star new shop selling g prawn noodle. Yummy. Recommend for those that do not like thick prawn soup. The pork chop is really succulent and juicy.
