BAKED FETA PASTA
INGREDIENTS
For The Sauce
- 1 block of feta cheese (about 180g)
- 2 cloves garlic
- 1 jar of Made in Italy Tomato and Herb pasta sauce
- 6 – 8 pieces of M&S Made in Italy Semi Dried Cherry Tomatoes in extra virgin olive oil
- 100g of Slice Hojiblanca Olive – Drained
- 4 tablespoons Italian Extra Virgin Olive oil
- 1 teaspoon salt
- 1 teaspoon coarse black pepper
- 1 teaspoon Italian Herb
- 1 teaspoon chili flakes (more if you like it spicy)
For the Pasta
- 500g M&S Gluten Free Penne
- 2 liters of hot water
- 2 tablespoon of salt

M&S Dried Parsley
METHOD
- Firstly, chop up the garlic, slice the semi dried cherry tomatoes and set aside. Pour the Tomato and Herb sauce in a baking dish, then sprinkle the garlic, sliced semi dried cherry tomatoes, olive on top of the sauce. Place the feta cheese in the middle and sprinkle salt, pepper, Italian herbs, chili flakes before drizzling the olive oil.
- In a preheated oven, turn the dial to 180c. Place the baking dish and cook the sauce for 15 -20 minutes until the feta cheese is slightly toasted around the edges.
- Whilst the sauce is cooking, in a large pot, bring some water up to a boil, then add the salt and pour in the pasta. Cook until the pasta is al dente. Reserve about 2 cups of the pasta water.
- Once the pasta sauce is cooked, remove from the oven and mash it with a ladle and mix the baked feta with the sauce until combined. Add in the sauce to the pasta and combine. If too dry add in 1 cup of the pasta sauce we reserved earlier. Drizzle more olive oil and sprinkling of M&S dried parsley before serving.
CHEF’S TIPS
- It is very important to salt your water when boiling your pasta and always reserve some pasta water to add to your sauce later.
- You can substitute the feta cheese with any soft cheese like cream cheese, brie, camembert or even soft tofu for a 100% vegan option.
