1. We caramelise onions for 3+hrs
2. We caramelise mushrooms for 3+ hrs
3. We make our own stock bases for our soups and sauces
4. We pluck basil leaves one by one by hand to remove even the stem
5. We brine our meats for up to 2 weeks and up
6. We age and flavour or meats for a whole month
7. We cure our lemons for a whole month to make Limoncello ourselves…… You get the idea…..
